Natural Colour? What does this really mean to the consumer? Part 1

In this three part series Guido de Jager discusses the results of a global survey that revealed detailed insights into consumer behaviour and preferences for natural colours and flavours. In Part one, Guido describes the methodology for the survey and key findings from the results. Part two, to be published next week, discusses consumer types and Part three discusses labelling and opportunities for the food industry.

In recent years, the food industry has seen a strong trend towards natural products and clean label solutions. But what exactly do manufacturers have to consider in developing products that can be successful today and in the future? They need to know exactly how the demand for naturalness manifests itself in different regions, what natural really means to the consumer and ultimately how it should be communicated on pack to enhance consumer appeal and impact purchase decision.
In order to provide this information and give detailed insights on the consumers perception of food and their related purchase behaviour, the market research institute TNS have conducted a global consumer survey. The survey places emphasis on attitudes towards packaged and processed food and the role colour has to play in the evaluation of products on the supermarket shelf.
The following research questions were taken as a basis for the survey:
  1. What do consumers seek to avoid and why?
  2. In which product categories is natural a key driver and what does it stand for?
  3. How are food colours perceived and evaluated by consumers?
  4. What impact do front of pack claims have on the purchase decision?

Methodology – worldwide comprehensive survey

To answer these questions, more than 5,000 consumers from ten different countries worldwide were surveyed with the help of a two-step method. In the first, qualitative phase, the attitudes of 175 parents from seven different countries in America, Asia, and Europe[1] were explored in an online platform. Over the course of two weeks, participants were provided with engaging conversation topics and assignments in their local language. By following and analysing their discussion, an in-depth understanding of consumer’s perspective on food and food colouring was achieved.
The preliminary study was also used as a basis for developing the questionnaire for the second, quantitative phase. Here, 5,000 people aged 18 to 70 were surveyed in ten different countries worldwide: Brazil, China, France, Germany, Indonesia, Poland, Spain, Thailand, the United Kingdom and the USA. From each country, 500 people were selected as a representative sample of the population in their home countries.

The desire for natural unites consumers around the globe

The survey’s results confirm that healthy food and beverages are a paramount concern of consumers all around the world: two thirds of consumers are very careful about their selection of groceries and pay close attention to a well-balanced diet. When buying processed and packaged food, 60 percent state that they should contain only natural ingredients.
In the mind of consumers, the term ‘natural’, in general, is particularly connected to the ingredients a product contains. Three out of four respondents agree that packaged food can be natural – as long as it is free from additives. When asked about the meaning of “natural food”, the top answer worldwide, given by nearly 80 percent of the sample, was a lack of artificial colours, followed by the lack of preservatives and artificial flavours. When demanding natural colours, shoppers have a clear definition of these in mind expecting natural food colourings to only originate from edible raw materials such as fruit and vegetables.

Potential health risks related to the presence of acrylamide in food: the EFSA’s risk assessment

Acrylamide is a chemical that naturally forms in starchy food products during every-day high-temperature cooking, such as frying, baking, roasting and also industrial processing usually above 120°C and low moisture. In view of the known toxic effects, the discovery of its presence in certain foods stimulated new research studies on its toxicity, on the influence of processing on the acrylamide levels in food, and on possible mitigation measures. The European Food Safety Authority (EFSA) has performed a risk assessment concluding that acrylamide in food potentially increases the risk of developing cancer for consumers in all age groups.


Acrylamide (CH2=CHCONH2) is a low molecular weight, highly water soluble, organic compound, that is used among others, as an industrial chemical. Heightened concerns about human exposure to acrylamide arose in 2002 when it was discovered that it forms in certain foods during every-day high-temperature cooking, such as frying, baking, roasting and also industrial processing at temperatures usually above 120°C and low moisture. As it forms in numerous baked or fried carbohydrate-rich foods, including French fries, potato crisps, breads, biscuits and coffee, there is widespread human exposure. Several pathways and precursors have been proposed to contribute to the acrylamide formation in food, the main formation mechanisms being the reaction of the free amino acid asparagine with reducing sugars that are naturally present in many foods, via the Maillard reaction.

The toxicological properties of acrylamide had been well studied and included neurotoxicity, genotoxicity, carcinogenicity and reproductive toxicity. In 1994 the International Agency for Research on Cancer (IARC) classified acrylamide as a Group 2A carcinogen (probably carcinogenic to humans). In view of the known toxic effects, the discovery of its presence in certain foods stimulated new research studies on its toxicity, on the influence of processing on the acrylamide levels in food, and on possible mitigation measures…

Studies reveal cocoa flavanols are good for heart health

Mars and researchers from the University of Dusseldorf and University of Reading have unveiled two new studies revealing that cocoa flavanols can help to keep our hearts healthy.



Cocoa flavanols are nutrients found naturally in the cocoa bean.
The research shows that consuming cocoa flavanols can decrease arterial stiffness and increase blood vessel function in healthy people, helping to reduce the risk of heart disease — the number one cause of deaths worldwide.
Mars and the universities conducted the research as part of the FLAVIOLA consortium – a pan-European research project that looks into the benefits of flavanols.

Studies show cocoa flavanols have a range of health benefits

“With the world population getting older, the incidence of cardiovascular disease, heart attacks and stroke will only increase,” says Professor Malte Kelm, Professor of Cardiology, Pulmonary Diseases and Vascular Medicine at University Hospital Düsseldorf and Scientific Director of FLAVIOLA. “It is therefore pivotal that we understand the positive impact diet can have on cardiovascular disease risk. As part of this, we want to know what role flavanol-containing foods could play in maintaining the health of the heart and blood vessels.”
Flavanols are a distinct group of naturally occurring compounds that can be found in a variety of foods such as tea, red wine, blueberries and raw cocoa. Cocoa is an especially rich source of flavanols, and the specific mixture of flavanols that is found in cocoa is unique. Many studies show cocoa flavanols have a range of health benefits, including improved blood flow and cardiovascular health.
In the first study announced by Mars today and published in Age, researchers investigated the effects of cocoa flavanol intake on cardiovascular function in healthy young and elderly individuals without history, signs, or symptoms of cardiovascular disease. In a trial, young and elderly healthy subjects consumed either a cocoa flavanol-containing drink or nutrient-matched, cocoa flavanol-free control drink bi-daily for 14 days. The researchers concluded that cocoa flavanol intake reverses age-related burden of cardiovascular risk in healthy elderly, highlighting the potential of dietary flavanols to maintain cardiovascular health.
In the second study, published in British Journal of Nutrition (BJN), researchers investigated the effects of cocoa flavanol on surrogate markers of cardiovascular health in low risk, healthy, middle-aged individuals without history, signs or symptoms of cardiovascular disease. The researchers found that, in healthy individuals, regular cocoa flavanol intake improved accredited cardiovascular surrogates of cardiovascular risk, demonstrating that dietary flavanols have the potential to maintain cardiovascular health even in low-risk subjects.

Barry Callebaut and Tony’s Chocolonely team up for fully traceable cocoa

The Barry Callebaut Group is teaming up with Tony’s Chocolonely, a chocolate company committed to bringing an end to slavery in the chocolate industry, to produce chocolate from fully traceable sustainable cocoa.


Barry Callebaut has installed a dedicated cocoa butter tank in its factory in Wieze, Belgium to produce cocoa butter from traceable beans sourced from Tony’s Chocolonely’s partner cooperatives in Côte d’Ivoire. With the cocoa liquor already being produced from beans from their partner cooperatives in Côte d’Ivoire and Ghana, all cocoa products in Tony’s Chocolonely’s chocolate will be traceable.

Barry Callebaut and Tony’s Chocolonely have cooperated since 2005, when Barry Callebaut started to produce their Fairtrade cocoa liquor. Under the new partnership agreement, the cocoa butter used in the recipes will become fully traceable.

A milestone towards fully sustainable products

We source our cocoa beans directly from our partner cooperatives and follow the beans along the supply chain, we pay a higher price, we have entered into long-term contracts with the farmers, we strengthen their organisations and improve quality and productivity together. We are proud to say that all cocao beans in Tony’s Chocolonely chocolate will become fully traceable and come from partner cooperatives we have long-term relationships with. It is possible. So we invite the rest of the industry to join us in making chocolate 100% slave free.”

World’s hottest chilli, the Carolina Reaper, goes on sale at Tesco

The Carolina Reaper, officially the world’s hottest chilli pepper, is being commercially grown in the UK for the first time ever and is now available in Tesco stores.



According to the Guinness Book of Records, the Carolina Reaper measures an average of 1.5 million Scoville units (the measurement for the level of heat in a chilli pepper), however, independent tests have recorded the heat level at a mouth-numbing 2.2 million Scovilles. This makes is some 400 times hotter than a jalapeno.
Tesco chilli pepper buyer Phoebe Burgess explained more about the fiery capsicum: “The Carolina Reaper is absolute meltdown material – it’s one for absolute hot food connoisseurs.
“Despite it being astonishingly hot it also has a wonderful fruity taste. Only a sliver is needed to add exciting flavour to your favourite curry.”

Chilli pepper demand is increasing

The Carolina Reaper is being grown by the UK’s largest producer of chilli peppers, Salvatore Genovese whose seven acre farm is based in Blunham, Bedfordshire.
Mr Genovese started growing chilli peppers 15 years ago. Since then chilli peppers have become so popular that he now grows about 15 tonnes each week just to satisfy UK demand.
Commenting on increasing demand for chilli peppers, Mr Genovese said: “Chilli pepper culture has become very popular in the UK over the last five years and on the back of the acclaim I’ve received from supplying Tesco I now get requests from all over the world.”
The Carolina Reaper will be sold as part of Tesco’s new Komodo Dragon brand of super-hot chilli peppers and will be marked with a blue flash label. The Komodo Dragon, which has a 1.4 million Scoville heat rating, was Tesco’s most popular chilli pepper last year.
